Carrie Mae's Banana Pudding

The mother of my godson "Waffle" -AKA Godbabymama- shared this delicious recipe.  She in turn learned this recipe from her sassy mother, Carrie Mae. Many thanks to both Carrie and Carole/Godbabymama for sharing this yummy Southern delight!


  • 1 cup sugar plus 2 teaspoons extra sugar
  • 4 Tablespoons flour
  • 3 cups milk
  • 3 egg yolks (save whites)
  • 1 teaspoon vanilla extract
  • 2 bananas
  • 1 handful vanilla wafer cookies






Heat oven to 350 F.

Mix the sugar and flour together.  

Add the milk to the sugar-flour mixture.

Add the egg yolks and vanilla extract.

Mix and stir together the mixture over medium heat.

Arrange the bananas and vanilla wafers in a baking dish.  

Beat the reserved egg whites and two teaspoons sugar into a meringue.  (The addition of a small pinch of Cream of Tartar can help the egg whites to stiffen.)

Pour the heated mixture over the bananas.  Spoon the meringue onto the bananas, wafers, and pudding mixture.  Bake at 350F until the meringue is nicely browned.

Serve warm or cool.
